My husband made these bars during the night, when I was asleep. He’s a night owl, and I’m a morning person, so it kind of makes sense that he would do it at this time.
He wanted to know if he could do it. He wanted to try and make something healthy for our kids.
I have included alternate substitutes down below after the recipe.
INGREDIENTS
50g butter
1/2 cup raw sugar
1/4 cup clover honey
200g pumpkin seeds (optional)
1 Weet-bix (crushed)
1/2 cup sultanas
1/2 cup rolled oats
1/2 cup self raising flour
DIRECTIONS
Preheat oven to 170°C. Line a 20cm cake pan (we used a square one) with baking paper. Place the butter, sugar and honey in a saucepan over medium heat. Cook, stirring, for 2-3 minutes or until the mixture is smooth and the sugar has dissolved. Put to one side and let it cool
Next, combine the pumpkin seeds, Weet-bix, sultanas, oats and flour in a large bowl. Add the butter mixture and stir until combined.
Spoon the mixture into the lined pan and use the back of a spoon to smooth the surface. Bake in oven for 25 minutes or until golden. Set aside in the pan for 30 minutes to cool completely. Cut into slices to serve.
ALTERNATIVES
You can substitute the butter with coconut oil. And instead of raw sugar, use Maple Syrup.
Of course you can make this gluten free by changing the flour, etc etc … but the basics are above.
