This pasta salad is AMAZING. Super simple and easy, it’s a great salad to pair with any meal (summer OR winter).
INGREDIENTS:
1 ½ cup small pasta spirals
410g can whole corn kernels, drained
1 capsicum (or 1/2 of two different coloured capsicums)
½ telegraph cucumber, diced
2 spring onions, sliced
Dressing:
3 Tbsp lemon juice
¼ cup olive oil
½ tsp brown sugar
WHAT TO DO:
Cook the pasta as per the instructions on the packet.
While the pasta is cooking, drain the corn kernels, and then combine with your prepared vegetables.
Mix the dressing ingredients up together.
Once the pasta is cooked, drain, and run under cold water to bring to room temperature.
Combine the pasta, vegetables and dressing.
Chill before serving.
